Pumpkin Chocolate Chip Muffins




Modified from a recipe found at Finding Joy in my Kitchen:

1 C pumpkin puree-try homemade!
1/2 C butter
1 egg
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp all spice

1 1/2 C flour
1/4 tsp. salt
3/4 C brown sugar
1 tsp. baking soda

1/2 C dark chocolate chips

Mix wet ingredients and spices together. Add in dry ingredients, except chocolate chips. Once well mixed, stir in chocolate chips.

Fill muffins tins 2/3 full (either greased or lined), should make about 18-20. Fill the remaining spots with about 1/4 cup water (this helps the muffins bake more evenly).

Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean/crumbly.
