Gingerbread Muffins

2 C white whole wheat flour (or my new fave GF Flour Blend!)

1/2 tsp. baking soda

1/4 tsp. salt

2 1/2 tsp. ginger

1 tsp. cinnamon

1/8 tsp. cloves

1/2 C brown sugar, packed

1/4 C applesauce

1/2 C molasses

1 egg

1 tsp. vanilla

3/4 C buttermilk

Begin by combining the dry ingredients in a large bowl.

Then, using a second bowl, mix the brown sugar, applesauce, molasses, egg, vanilla and buttermilk together. Stir until the ingredients are well mixed.

Pour the wet and dry ingredients together to form a nice batter.

Fill muffin tins 2/3 of the way full, and then bake at 350 for 20-25 minutes until muffins are lightly browned and a toothpick comes out clean when inserted into the center.

***I saw these this morning and knew I had to make them!!! Sooooo good! They came out moist and springy, even with the GF flour! Mine took just 20 minutes, and could have probably come out sooner! These will be a regular thing around here!***
