Cherry Balsamic Chicken

(I need to work on my photography!)

1 lb. chicken breasts

3/4 C sweet cherries {I used frozen}

1/4 C Balsamic vinegar

1 C chicken broth

Olive oil, as needed


In a little bit of olive oil, brown the chicken breasts on both sides until nicely golden brown (about 5 minutes per side).


Then, add in the chicken broth, and allow the chicken broth and chicken to simmer away for about 10 minutes, covered.


Add in the cherries and vinegar. Cover and continue simmering, stirring occasionally, for another 10-15 minutes.
