Teriyaki Chicken

We usually use Yoshida's Gourmet Sauce for our teriyaki chicken nights... I pulled out the yakisoba noodles, got out the pineapple and chicken, and realized we were out of sauce! So, I made my own :-) Here's the basic recipe, which can easily be adjusted to taste!

(mix in a separate bowl before adding to raw chicken to marinate so you can taste the flavors...I forgot to do this, luckily it turned out deliciously anyway!)

3/4 c teriyaki sauce
1/4 c soy sauce
juice from 1 can pineapple tidbits (save pineapple for later)
3 minced garlic cloves (we loooooove garlic)
1/2-1 teaspoon ground ginger

4 chicken breasts

Poke the chicken with a fork all over to let the juices soak in...marinate over night or at least for several hours. Grill on the BBQ (you can cook on the stove, but the BBQ gives it a little carmelized coating which tastes so yummy!)

Boil leftover marinade, thicken with cornstarch, and add pineapple.

Serve over rice or yakisoba noodles!
