1 1/4 C oats (I used quick cook, but Old Fashioned will work)
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 C applesauce
1/2 C milk (+ 1 tsp. vinegar)
1/2 C brown sugar
1 tsp. vanilla
1 C mixed berries
Begin by mixing together the dry ingredients.
Then, mix together the milk, applesauce, egg, brown sugar and vanilla.
Combine the wet and dry ingredients.
Stir until just moist.
Gently fold in the berries.
Then, fill muffin tins 3/4 full.
Bake at 375 for 15-18 minutes, until muffins are done.
These are delicious! Fairly dense, not too sweet, pretty healthy! Definitely will make these again!!!
