Peppermint Candy Cane Brownies
Found HERE!
Brownies:
4 squares unsweetened chocolate (4oz)
1 C butter (2 sticks)
4 eggs
2 cups sugar
1t vanilla
1 1/4 C flour
1/2 t baking powder
Frosting:
2 C powdered sugar
4 T butter, softened
1 1/2 t peppermint extract
1 T milk
pink food coloring
Chocolate Glaze:
6 oz (about a cup) semi-sweet chocolate chips ,you could also use dark
6T real butter
Additional:
1/2-1 C crushed candy canes (Use Bob’s NOT Spanglers!)
First, the Brownies:
Preheat oven to 350 degrees.
Roughly chop baking squares so they’ll be easier to melt, then place them in a microwave-safe bowl along with the 2 sticks of butter (also chopped).
Melt in 30-45 second intervals, stirring in between, until melted and smooth. Set aside. Don’t accidentally stick your finger in the melted butter and chocolate combo because it will laugh at you for forgetting that it is unsweetened.
In a stand mixer or with electric beaters, beat eggs for about 3 minutes until thick and frothy. Add sugar and vanilla and beat to combine. Then add in the melted chocolate and butter that you set aside. Combine flour and baking powder and whisk into brownie batter by hand until just combined. Pour into a lightly greased 9×13 pan. If you want to make the job much easier, line your pan with foil first.
Bake for 20-25 minutes. Test with a toothpick for doneness and don’t over bake! When brownies are done, cool on a cooling rack. When completely cool, pop in the fridge to chill. (makes the frosting spreading easier).
Next layer is the frosting:
Combine all frosting ingredients and beat until light and fluffy. Add extra milk by teaspoonful if you need a little more. Spread evenly over cooled/chilled brownies and place back in the fridge to chill again while you do the final step.
Chocolate Glaze:
Place chocolate chips and butter in a microwave-safe bowl and cook in 30 second intervals until smooth.
Set aside for a few minutes, stirring occasionally, so it can cool off just a bit. Remember in the first step when I told you to not accidentally let your finger fall in the chocolate butter mixture? Totally doesn’t apply to this chocolate butter mixture. Quickly spread on top of brownies. I say quickly because the frosting is cool and the chocolate is hot. If you take your sweet time and over do it, you’ll make a big gooey mess. Just spread it on quick.
Sprinkle the crushed candy canes on top and return to the fridge until chocolate is set on top.
Remove from fridge a few minutes before serving. Cut into squares, eat, ooh and ahh, and then eat another one. Or two.
***Super yummy! Rich, so make sure you have people to share with. Hubby thinks this is a waste of good brownies (he dislikes peppermint and chocolate together!)***

Slightly adapted from Food Network
Ingredients
- Cooking spray
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper
- 2 cups baby spinach
- 1 tomato, chopped
- 1 Tbs minced, dried onion (or 1/2 fresh onion if you have it)

- 7 large eggs
- 1/4 cup skim milk
- 1/3 cup (1 1/2 ounces) grated sharp cheddar

4. Meanwhile, whisk the eggs, milk, and salt and pepper until well combined. Stir in the cheese. Divide the egg mixture evenly between the muffin tins, filling them about halfway. Top evenly with the spinach mixture.
5. Bake until the quiches are well risen, golden brown and set, 20 to 25 minutes. Cool in the pan 5 minutes and then transfer to a wire rack. Serve warm or at room temperature with greens.

Buffalo Chicken in the Crockpot
I found this recipe HERE, originally intended for lettuce wraps. It is pretty versatile, and could be used for wraps, salads, tacos, etc.
Ingredients:
- 24 oz boneless skinless chicken breast
- 1/2 onion, diced
- 1 clove garlic
- 16 oz chicken broth
- 1/2 cup hot cayenne pepper sauce (I used Frank's)
In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). Cover and cook on high 4 hours.
Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.

BBQ Pineapple Chicken
I found this recipe here, and tweaked it just a little.
1 cup BBQ sauce
1 can pineapple rings
Marinate chicken in BBQ sauce and pineapple juice overnight.
When you're ready, grill chicken on BBQ until no longer Pink. Grill the pineapple rings too, at the same time. They're delicious this way!
Don't toss the sauce! Boil it in a saucepan over medium-high heat for 5 minutes. Allow to cool slightly before serving.
Serve chicken and pineapple over rice, with a couple spoonfuls of sauce over the top. Or make it into a sandwich with cheese, like the original recipe :-)

Banana Chocolate Chip Muffins
These are an adaptation of one of our favorite recipes, Monkey Squares. I decreased the sugar a bit, added chocolate chips, and omitted the browned butter icing. Hey, there are some limits to being able to call something a muffin rather than a cupcake :-)
1 cups sugar
1 cup sour cream
½ cup butter, softened
2 eggs
1 ¾ cups (4) ripe bananas, mashed
2 teaspoons vanilla
2 cups flour (I did use GF)
1 cup dark chocolate chips

1 3/4 cups chicken broth
2/3 cup milk

Directions
- Preheat oven to 400 degrees F.
- In a saucepan, combine chicken, carrots, beans, and corn. Add water to cover and boil for 10-15 minutes. Remove from heat, drain and set aside.

***So good! I made this for lunch on my day off, because hubby doesn't like Chicken Pot Pie. Pretty sure it is the only thing he really doesn't like. So I'll deal. Besides, that means more for me, right???***

Chicken Spiedini (Minus the Spiedini) :-)
So I found this recipe over at What's Gaby Cooking? It was a guest post, and an amazing recipe!
Of course, I tweaked it. Preferences, ingredients available, and of course I can't leave a recipe alone... :-)
Oh, and the spiedini...that means meat on a stick. So basically I just didn't skewer the chicken.
Ingredients:
2 cans diced tomatoes, drained as much as possible
1 Tbs butter
1/4 cup chicken broth
1 1/2 Tbs sugar
1 pinch coarse salt (more or less depending on the salt in your tomatoes)
1 pinch pepper
1/2 tsp Italian seasoning
1 clove garlic, minced
3 boneless skinless chicken breast halves, cut into bite-sized pieces
1 cup bread crumbs (I used ground rice Chex)
1/4 cup parmesan cheese
2 cloves garlic, minced
4 Tbs EVOO
4 Tbs butter, melted
8-12 oz spaghetti, cooked according to package directions (we like a quinoa-corn mix)
Lemon juice for sprinkling
Instructions
- Simmer tomatoes, butter, broth, sugar, salt, pepper, Italian seasonings for 20-30 minutes on medium. Stir occasionally.
- In a shallow dish, combine the breadcrumbs, parmesan, garlic and a tiny pinch of salt and pepper.
- In another, combine oil and melted butter.
- Dredge the chicken pieces through the butter/oil mixture, then through the breadcrumb mixture.
- Heat 2 Tbs. oil in a medium skillet over medium-high. Cook the chicken until golden brown on all sides and cooked through, about 8 minutes total.
- Add cooked pasta to the tomato sauce. Toss to combine.
- Serve chicken over a bed of spaghetti. Sprinkle with lemon juice.
***Super yummy! Took me a bit to set it up and make it, but now that I've got the steps down, it is actually pretty simple. Yummy, comforting meal! This will be in the regular rotation!***

Brown Sugar Oatmeal Scones
I found this recipe at Bakingdom! Love her site! Of course I modified it slightly (when don't I???)
FOR THE SCONES
1 1/2 cups quick oats
1 1/2 cups all-purpose flour (I used GF)
2 1/2 tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup (10 tablespoons) cold unsalted butter, cut into small chunks
1/2 cup milk (Ok to use Soy)
1 egg
2 tablespoons agave
FOR THE GLAZE
1 tablespoon reserved milk mixture
2 tablespoons agave
1 tablespoon sugar
Preheat oven to 375 degrees. Spread oats on a rimmed baking sheet and bake for 8-9 minutes. Allow to cool completely before continuing.
Increase the oven temperature to 450 degrees. Line another baking sheet with parchment.
Place all of the dry ingredients, except for the oatmeal, in the bowl of a food processor and pulse six or eight times to combine. Scatter the cold butter evenly over the top of the flour mixture in the food processor. Pulse 12 to 15 times to mix. The mixture should resemble corn meal or wet sand. Transfer the mixture to a medium bowl and stir in the cooled oats.
In a small bowl, combine the milk, egg, and agave syrup. Whisk the ingredients together until combined. Measure out 1 tablespoon of the mixture and set aside for the glaze.
Add the milk mixture to the flour mixture and use a rubber spatula to bring the dough together slightly. Once the mixture starts to form a loose dough, knead it about six times to form a mostly cohesive dough. Turn the dough onto a floured work surface and gently knead a few more times, until the dough comes together. Shape the dough into a disk about 7-inches in diameter. Cut into 8 wedges and arrange on prepared baking sheet.
Combine the reserved tablespoon of milk with the additional 2 tablespoons of agave. Brush the mixture over the scones with a pastry brush. Sprinkle the sugar over the tops of the scones.
Bake for 12-14 minutes until deep golden brown. Allow to cool for 10-15 minutes before serving.
Add in ideas, just before shaping into a disk:
3/4 cup cinnamon chips (and sprinkle cinnamon sugar on top before baking)
1 cup dried cranberries (can add 6 Tbs orange juice concentrate to to liquid/milk mixture)
***Super Yummy! These freeze really well also!***

Cinnamon Cookie Crunch Popcorn
I came across this recipe on Our Best Bites. They always have great recipes!
Slightly modified:
12 cups air-popped popcorn
16 oz white chocolate (chips are fine)
1/2 cup red hot candies
10 Oreo cookies (Glutino GF work great)
optional: 1/4-1/2 teaspoon cinnamon flavored oil (I left out)
3 tablespoons semisweet or dark chocolate chips
kosher or sea salt (I left out)
Instructions
Pulse red hots in a food processor until they are just roughly chopped.
Break cookies up into rough chunks, by smashign in a baggie. Do not crush into crumbs!
In a medium sized microwave safe bowl, melt white chocolate in 30 second intervals, stirring until smooth. Gently stir in red hots and chocolate cookies and then add cinnamon oil to taste (if desired).
Pour mixture over popcorn and stir well to coat. Pour popcorn mixture onto a baking sheet lined with parchment and set aside. Melt chocolate chips and drizzle over popcorn mixture. Sprinkle kosher or sea salt lightly over mixture to taste (if desired). Let popcorn mixture harden. When completely dry, break into chunks and store in airtight container.
***Super yummy! Great flavor combination. It is super sweet, so I didn't find it hard to control myself, but really great to pop a few chunks here and there throughout the day! What a fun holiday treat!***

GF Pancakes
I came up with this after reading several recipes and staring at the Bisquick box for a long time! GF Bisquick is way too expensive to use regularly, in my opinion! The good new is, this is just as easy!
1 cup flour (your choice...I use my favorite GF flour blend, which I always have on hand!)
1 1/2 tsp baking powder
1/2 tsp salt
1-1 1/2 cup milk (I used soy milk)
1 egg
Blend dry ingredients together, add egg, add milk until desired consistency.
Pour 1/4 cup onto hot greased griddle. Cook until edges are crisp, flip and cook until golden.
Enjoy!
