I have always wanted to try this, but never got around to it...
Cauliflower was on sale recently, so I went for it, and I am soooo glad I did!
Simple:
Steam your cauliflower however you like. I use our steamer/rice cooker. You could also roast it for a deeper flavor.
Once it is done, mash it and season like you would mashed potatoes-butter, salt, pepper, garlic, etc.
It smells kinda funky, because cauliflower does. But tastes amazing! You will know it is not potato, but wouldn't necessarily guess it is cauliflower!
Another great side dish to help reduce the carbs/grains we usually eat!
