Quinoa Pilaf



1 1/2 cups water
3/4 cup quinoa
1/2 cup sliced almonds
1 Tbs plus 1 tsp olive oil, divided
1 small red bell pepper, finely chopped
1/2 cup red onion, finely chopped
2 tsp rice vinegar
salt and pepper, to taste

Heat oven to 350.

Toast quinoa in pan, stirring constantly, for about 5 minutes over medium-high heat.
In a medium sauce pan, bring water to a boil. Add toasted quinoa. Cover, reduce heat to low, and cook for 22 minutes (just like rice!).

Meanwhile, toast almond slices for 3-4 minutes in oven, until lightly browned. Be careful not to burn them!!!

Heat 1 tsp olive oil in a pan over medium heat. Add pepper and onion and saute until soft, about 4-5 minutes.

When quinoa is finished cooking, combine with remaining ingredients. Season with salt and pepper.
