Unstuffed Cabbage



1 lb ground beef
2 cloves garlic, minced
1 medium onion, chopped
1 (16-ounce) bag coleslaw mix
1 (28-ounce) can diced tomatoes (or stewed tomatoes - broken up)
1 (8-ounce) can tomato sauce
1 cup uncooked rice
2 cups water
1 teaspoon salt
Grated Parmesan cheese, optional
In large pot or dutch oven cook ground beef with garlic and onion until meat is done. Drain. Stir in remaining ingredients except Parmesan cheese. Cover and cook over low heat about 20 minutes or until rice is done and liquid is absorbed. Serve with Parmesan cheese if desired.

***I had to cook mine an extra 30 minutes, because the rice was NOT cooked! But once I did that, it was yummy!!! I think you should actually cook it at a higher temperature, to ensure simmering/slightly boiling. Great flavor, much less work than stuffed cabbage rolls!***
