This isn't a strict recipe...just some guidelines. Tweak it how you like :-)
3-4 chicken breasts, cooked and cut into bite-sized pieces (I grill mine)
16-20 oz salsa (we like the kinds that are a little chunky, but any will work)
1 can or bag of frozen corn
1 can black beans
Mix the cooked chicken, salsa, corn, and black beans in a sauce pan and heat, gently simmering for a few minutes. I like to eat mine over rice with cheese and sour cream on top. Scott likes to put his, along with rice, cheese, and sour cream into tortillas like a burrito. There really is no wrong way to do it!
